Rooster is Ireland’s favourite potato, bred at Teagasc’s Oak Park Research Centre in County Carlow and now the most widely grown variety in the country. This late maincrop produces high yields of large, round to oval tubers with deep, dusky red skins, few shallow eyes that make peeling easy, and golden yellow flesh with an excellent flavour. Its floury texture makes it a superb all-rounder, delicious boiled in its skin, mashed, roasted, baked, steamed or made into chips.
Rooster shows good resistance to common and powdery scab, leaf roll virus, bruising and splitting, along with fairly good resistance to blight in the tubers. It’s also an excellent keeper, so a good crop will store well into the winter months. Chitting is optional for maincrops but helps give a strong start. Plant out in April, around 10cm deep and 40cm apart. Earth up as the shoots develop so the tubers stay covered, as potatoes exposed to light turn green and shouldn’t be eaten. Water well during dry spells and watch for blight on the foliage in warm, humid weather. Your crop should be ready to lift from September into October. Store in a cool, dark, dry place.
