Pink Fir Apple is a true heritage treasure, an old French variety that can be traced back to at least 1850 and has been kept going by enthusiasts ever since. Holding the RHS Award of Garden Merit, it’s widely regarded as one of the finest-tasting salad potatoes you can grow. The long, knobbly tubers have pink skins and butter-yellow, waxy flesh with a distinctive, slightly nutty flavour that even improves in storage. Best cooked in its skin, it’s superb boiled and served warm with butter or cold in salads, and also delicious roasted.

As a late maincrop, Pink Fir Apple needs a long growing season, but rewards your patience with a generous harvest that stores exceptionally well through the winter. It grows well in borders, raised beds and large containers, in full sun or partial shade and fertile, well-drained soil. Chit your seed potatoes in a cool, bright, frost-free spot for around six weeks, then plant out from mid-April, around 10cm deep and 30cm apart. Earth up as the shoots develop so the tubers stay covered, as potatoes exposed to light turn green and shouldn’t be eaten. Keep plants well watered to boost yields and help prevent scab, and lift your crop from late August into October, around two weeks after the foliage has died down. Store in a cool, dark, frost-free place.
